Carrot salad with raisins and pineapple topcook.tomathouse.com
Ingredients:
- 450 g of carrots
- 1/3 cup golden raisins
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 3 tablespoons of sugar
- 0.5 tsp salt
- 1/3 cup fresh pineapple, diced
Preparation:
- Place the raisins in a small bowl and pour boiling water over them. Let sit for 5 minutes, then drain.
- Fit the grater attachment to a food processor. Cut the carrots in half and place them sideways in the feed tube. Grate the carrots in batches. Place the grated carrots in a medium bowl, add the lemon juice, and toss to combine.
- For the dressing, combine sour cream, mayonnaise, sugar, and salt. Pour the dressing over the carrots and add the pineapple and raisins. Stir and serve.
