Ingredients:
- 1.8 - 2.2 kg chicken thighs
- 0.5 cup white vinegar
- 0.5 cup soy sauce
- 4 cloves garlic, crushed
- 1 teaspoon black peppercorns
- 3 bay leaves
- Steamed rice, for serving
Preparation:
- Combine the chicken thighs, vinegar, soy sauce, garlic, peppercorns, and bay leaf in a large saucepan. Cover and refrigerate the chicken to marinate for 1-3 hours.
- Bring the chicken to a boil over high heat. Reduce the heat, cover, and simmer for 30 minutes, stirring occasionally. Remove the lid and simmer until the sauce has reduced and thickened and the chicken is tender, about 20 minutes more. Serve with rice.
