Apple chips

Ingredients:

  • 2 tbsp of water
  • 1.5 cups of sugar
  • Juice of 2-3 lemons
  • 2 small apples, preferably crisp, such as Royal Gala, washed and dried

Preparation:

  1. In a small saucepan, combine water and sugar and bring to a gentle simmer over medium heat. Set aside to cool.
  2. Place the apples on a flat surface. Using a mandoline or a sharp knife, slice each apple into thin rounds, placing them with the core facing the blade. Remove all the seeds and sprinkle the apples with lemon juice. Place the apple slices in the syrup and let them soak for several hours or, better yet, overnight.
  3. Preheat oven to 93°C.
  4. Remove a few apple slices from the syrup and pat them dry with a kitchen towel. Place them in a single layer on a parchment-lined baking sheet or a baking sheet with a wire rack.

    Note:

    You can place something heavy, such as a metal spoon, on each end of the paper to prevent it from curling as the chips bake.
  5. Dry the apples in the oven until crisp, about 1 hour.
