Ingredients:
- 6 ripe avocados
- Juice of 3 limes
- 1 medium onion, chopped
- 1 clove garlic, crushed and minced
- 2 serrano peppers, sliced into rings
- 1 large handful fresh cilantro with stems, about 1/2 cup, finely chopped
- Extra-virgin olive oil
- Coarse salt
- Freshly ground black pepper
Preparation:
- Halve the avocado and remove the pits. Using a tablespoon, scoop out the flesh into a bowl. Mash the avocado with a fork or potato masher to create a chunky paste. Add the remaining ingredients and toss. Drizzle with olive oil, season with salt and pepper to taste, and toss again.
- Place a piece of plastic wrap on the surface of the guacamole to prevent it from browning and refrigerate for at least 1 hour before serving.
