Honey-glazed peanuts

Ingredients:

  • Vegetable oil
  • 3/4 cup sugar
  • 2 tablespoons of honey
  • 2 tsp vanilla extract
  • Coarse salt
  • 2 cups shelled unsalted peanuts

Preparation:

  1. Preheat oven to 200°C. Grease a baking sheet with a little oil.
  2. Combine sugar, honey, 3 tablespoons water, vanilla, and 1/2 teaspoon salt in a heavy-bottomed saucepan. Cook over medium heat, stirring with a wooden spoon, until the sugar dissolves.

    Add the peanuts and cook, stirring, until the mixture begins to simmer, about 1 minute. Continue cooking, stirring constantly, until the sugar mixture begins to dry and clings to the surface of the nuts, another 2 to 4 minutes. Spread the nuts on the prepared baking sheet and spread them into a single layer.
  3. Bake the nuts until the glaze begins to melt, about 10 minutes. Stir, then continue baking until golden brown, another 2 to 4 minutes.

    Remove the baking sheet from the oven and stir the nuts to ensure the glaze is evenly distributed over the surface of the nuts. Leave to cool on the baking sheet. Store. roasted peanuts, in a closed container, at room temperature for 1 week.
