Salted Caramel Apple Pie

topcook.tomathouse.com

Ingredients:

  • 0.5 cups of sugar
  • 1 teaspoon freshly squeezed lemon juice
  • 2 tablespoons of water
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter, cut into pieces,
  • 0.5 tsp vanilla extract
  • A pinch of coarse salt
  • 1 purchased closed apple pie
  • Salt flakes, for sprinkling

Preparation:

  1. Place the sugar in a small nonstick skillet, drizzle with lemon juice and water, and cook over medium heat, stirring until dissolved. Then stop stirring and cook, swirling the pan occasionally, until the mixture turns amber, 4-5 minutes. Watch carefully, otherwise the caramel will burn quickly.
  2. Carefully pour in the heavy cream (it will splatter) and whisk. Stir in the butter until smooth. Remove the caramel from the heat and stir in the vanilla extract and coarse salt. Transfer to a bowl and let cool for at least 30 minutes.
  3. Spoon the cooled caramel over the pie. Sprinkle with flaky salt before serving.
