French Sablé cookies

Ingredients:

  • 115 g softened butter
  • 96 g of sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 cup premium flour
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • Crystal sugar, chopped

Preparation:

  1. Cream the butter and sugar together. Add the egg yolk and vanilla and beat thoroughly. Combine the flour and salt. Add to the butter mixture and mix until the dough is smooth and even. On a lightly floured surface, form the dough into 2.5-5 cm diameter cylinders. Wrap in waxed paper or plastic wrap and refrigerate for at least 1 hour.
  2. Preheat the oven to 350°F (175°C). Brush the chilled dough cylinders with beaten egg and roll in crystal sugar. Using a sharp knife, cut the dough into circles approximately 0.8 cm thick. Place them on a parchment-lined baking sheet, spacing them approximately 2 cm apart.
  3. Bake for about 10 minutes or until cookies are lightly browned around the edges.
