Ingredients:
- 2 ripe but firm avocados
- 0.5 cups distilled white vinegar
- 1 tbsp coarse salt
- 1 tbsp. sugar
- 0.5 tsp whole coriander seeds
- 0.5 tsp whole cumin seeds
- 6 fresh sprigs of cilantro
- 1 clove garlic, thinly sliced
- Half a jalapeño or serrano pepper, seeded and stemmed, and cut into thick strips
- Zest of 1 lime, peeled with a vegetable peeler
Preparation:
- Combine vinegar, salt, sugar, coriander seeds, cumin seeds, and 0.5 cups of water in a small saucepan and bring to a boil, stirring constantly to dissolve the salt and sugar. Remove from heat and let cool to room temperature.
- Halve the avocado, peel it, and slice it into 1-cm-thick slices. Place the avocado slices in a wide-mouthed glass jar along with the cilantro sprigs, garlic, jalapeño, and lime zest.
- Pour the cooled marinade over the jar and close the lid. Carefully turn the jar upside down and swirl it to evenly combine the spices, avocado, and brine. Refrigerate for at least 2 hours. Marinated avocado slices can be stored, tightly covered, for up to 1 week..
