Ingredients:
- 4 cups seedless watermelon chunks
- 2 tablespoons white wine vinegar
- Juice and zest of 1 lime
- 1/4 cup extra-virgin olive oil
- 1 red onion, thinly sliced
- 1 cup feta cheese
- 1/4 cup mint, thinly sliced
- 2 cups arugula
Preparation:
- In a small bowl, combine white wine vinegar, lime zest, and lime juice. Stir in olive oil and season with salt and pepper. Add thinly sliced red onion and let marinate for 5-10 minutes while you prepare the salad.
- Place the watermelon, feta, mint, and arugula in a large bowl. Toss with the vinaigrette and serve immediately.
