Ingredients:
- 220 g ziti pasta (tubes)
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 small shallot, chopped
- 1 teaspoon dried oregano
- 1 cup chopped cucumber
- 0.5 cup crumbled feta
- 1/4 cup chopped parsley
- 1/4 cup pitted Kalamata olives, chopped
- 2 medium tomatoes, chopped
Preparation:
- In a large saucepan, bring salted water to a boil.
- In a large bowl, combine olive oil, vinegar, shallot, oregano, 1/2 teaspoon salt and a few grinds of black pepper.
- Place the pasta in boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool; place in a bowl with the dressing.
- Add the cucumber, feta, parsley, olives, and tomatoes to a bowl and toss. Season with salt and pepper to taste. This pasta salad is best served immediately.
