Candied almonds

Ingredients:

  • 3 cups almonds with skins
  • 90 g unsalted butter
  • 3 tablespoons maple syrup
  • 3 tablespoons light brown sugar
  • 3/4 tsp ground allspice
  • 0.5 tsp salt
  • Special equipment: caramel thermometer

Preparation:

  1. Spread the almonds in an even layer on a foil-lined baking sheet.
  2. In a saucepan over medium heat, melt the butter, maple syrup, brown sugar, allspice, and salt. Bring to a boil and cook for 1 minute, or until the mixture reaches 185°F (88°C).
  3. Pour the mixture over the almonds and let cool completely until the glaze sets. Serve immediately.
    Exit: 3 tbsp.
