Asian Red Cabbage Salad with Peanuts topcook.tomathouse.com
Ingredients:
- 2 tablespoons unsalted creamy peanut butter
- 1 tbsp hot mustard
- 1 tbsp dark sesame oil
- 1 tbsp soy sauce
- 2 tsp peeled and grated fresh ginger
- 2 tsp. honey or agave nectar
- Juice of 1 lime (about 2 tbsp)
- 6 cups thinly shredded red cabbage (about half a medium head)
- 1/4 cup thinly sliced fresh basil
- 2 tbsp fresh cilantro, chopped
- 3 green onions, thinly sliced diagonally
- 2-3 tbsp roasted unsalted peanuts, chopped
Preparation:
- In a large bowl, combine the peanut butter, mustard, sesame oil, soy sauce, ginger, honey, and lime juice. Add the cabbage, basil, cilantro, and green onions and toss to coat.
- Transfer to a serving platter, sprinkle with chopped peanuts and serve immediately.
