- 1/4 cup honey
- 3 tablespoons balsamic vinegar
- 4 whole chicken breasts on the bone
- Olive oil, for frying (optional)
- Mint sauce with green peas, recipe below
Mint sauce with green peas
- 2 cups frozen peas, blanched and drained
- 0.5 cup white wine vinegar
- 3 tbsp chopped mint leaves
- 2 tbsp chopped cilantro leaves
- 1 jalapeño, roasted or baked, chopped
- 1/4 cup olive or canola oil
- 1 tbsp. honey
Preparation:
- Preheat the grill to medium heat. Combine the honey and balsamic vinegar in a small bowl. If desired, brush the chicken breasts on both sides with olive oil and season with salt and black pepper. Grill for 7-10 minutes per side, or until the chicken is browned and cooked through. Brush with the honey glaze during the last few minutes of cooking. Serve on a bed of mint sauce or drizzle with the sauce.
Mint sauce with green peas:Place the peas, vinegar, mint, cilantro, jalapeño, salt, and pepper in a blender and blend until smooth. With the blender running, slowly add the olive oil and season with salt and pepper to taste.
- Add honey and beat again. If the mixture is too thick, stir in a few tablespoons of cold water.
