Chicken with balsamic barbecue sauce topcook.tomathouse.com
Ingredients:
Balsamic barbecue sauce
- 1 cup balsamic vinegar
- 3/4 cup ketchup
- 1/3 cup brown sugar
- 1 clove garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 0.5 tsp salt
- 0.5 tsp ground black pepper
Chicken
- 4 pieces of chicken (a mixture of breasts, thighs, and drumsticks)
Preparation:
Barbecue sauce: Place all ingredients in a small saucepan and stir until smooth. Cook over medium heat until the sauce has reduced by a third, about 15-20 minutes.
Chicken: Place a grill pan over medium heat or preheat a gas or charcoal grill. Season the chicken with salt and black pepper. Lightly brush the chicken with barbecue sauce using a pastry brush. Place the chicken on the grill. Place the remaining barbecue sauce, still in the same pan, over low heat or on the edge of a gas or charcoal grill and let it simmer while the chicken cooks.
- Grill the chicken for about 8 minutes per side. Brush the meat with barbecue sauce every few minutes. Remove the chicken from the grill and let rest for at least 5 minutes. Serve with warm barbecue sauce.
- Alternatively, you can bake the chicken in the oven. Preheat the oven to 190°C (375°F). Place the chicken, skin-side up, in a baking dish and bake for 25 minutes. Remove the dish from the oven and pour barbecue sauce over the entire surface of the chicken. Return it to the oven and bake for another 15 minutes.
